Avocado Shrimp Salad


  • 1 Tbsp Old Bay Seasoning
  • 1-2 lb medium shrimp, peeled and diced
  • 3/4 cup cucumber, peeled, seeded and cut into 1/4” cubes
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh chives
  • 2 Avocados
  • Salt
  • 4 cups mixed greens


  • Grated zest of 1 lemon
  • 3 Tbsp fresh lemon juice
  • 3 tbsp olive oil
  • 3 tbsp mayo
  • salt and pepper


In a large sauce pan, boil 4-5 cups of water with old bay seasoning, add shrimp, lower heat and simmer for 1 minutes. Turn off heat and rest for 3 minutes, drain and let cool.

Cut cooled shrimp into 1/2” chunks, place in bowl with cucumber, dill, and chives.

In small bowl, mix lemon zest, lemon juice and oil, whisk in mayo till creamy. Season with salt and pepper and reserve 1 tbsp dressing for greens. Refrigerate till ready to serve.

Serve on top of halved avocado, toss greens with remaining dressing.
