Vinaigrette
- 1/4 cup packed dark brown sugar
- 2 Tbsp fresh lime juice
- 2 Tbsp low sodium soy sauce
- 1 chopped serrano pepper
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp chopped fresh ginger
- 1 Tbsp molasses
- 1 tsp chopped garlic
- 1/4 cup peanut oil
Combine brown sugar, lime juice, soy sauce, pepper, cilantro, ginger, molasses in garlic in food processor and combine until smooth. with the processor running, slowly add peanut oil and blend thoroughly
Sambal
- 3 cups shredded green cabbage
- 3 cups shredded rotisserie chicken
- 2 cups seeded and sliced cucumber
- 1 1/2 cups julienned carrot
- 1 cup bean sprouts
- 1/2 cup sliced red onion
- 1/2 cup dry roasted peanuts
- salt to taste
- cilantro leaves
combine cabbage, chicken, cucumber, carrot ,sprouts, onion and peanuts, toss with vinaigrette and season with salt to taste, serve cold, garnished with cilantro
