Chickpea Burgers

  • 8 oz red potato
  • 3 tbsp olive oil
  • 1 tsp minced garlic
  • 1 16 oz can chickpeas, drained, rinsed
  • 1 tbsp fresh parsley
  • 1/2 tsp salt
  • 1/2 tsp grated lemon rind
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground black pepper
  • 2 large eggs, beaten (or egg yolks, if you like it stiffer)

Place potato in saucepan, cover with water, bring to a boil and cook 20 minutes. Drain, coarsely chop and place in a bowl. Add 1 tbsp oil and garlic to the bowl, mash potato. Remove 3 Tbsp chickpeas and set aside, add the remainder of chickpeas to potato mixture and mash. stir in remaining chickpeas, parsley and the rest of the ingredients. Divide into 4 burgers. Cook 2 burgers at a time in 1 tbsp of oil. Cook them 4 minutes on one side, flip and cook another 3. serve with roasted red pepper, mayo, lettuce, and other things, on a bun.
