Green Bean Casserole

  • Fried onions
  • 2 tablespoons plus 1 teaspoon kosher salt, divided
  • 1 pound fresh green beans, rinsed, trimmed and halved
  • 2 cups cream of mushroom soup
  1. Preheat the oven to 400 degrees F.
  2. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan.
  3. Add the beans and blanch for 5 minutes.
  4. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking.
  5. Drain and set aside.
  6. In a bowl, pour 2 cups of mushroom soup.
  7. Stir in 1/4 of the onions and all of the green beans.
  8. Place in 9” square glass pan.
  9. Top with the remaining onions.
  10. Place into the oven and bake until bubbly, approximately 15 minutes.
  11. Remove and serve immediately.
