Lemon Garlic Crumb Shrimp

ingredients

  • 1 spray cooking spray
  • 1 1/4 lb uncooked shrimp, peeled and deveined (about 24 shrimp)
  • 1 tbsp fresh lemon juice
  • 2 tsp extra virgin olive oil, divided
  • 1/2 tsp table salt, divided
  • 1/8 tsp freshly ground black pepper
  • 1/2 cup panka bread crumbs
  • 1 1/2 tsp garlic, minced
  • 1 tsp lemon zest
  • 1 tbsp chopped parsley

directions

  1. preheat oven to 425 degrees F
  2. Line a rimmed baking sheet with aluminum foil; coat foil with cooking spray
  3. Place shrimp on prepared pan; sprinkle with lemon juice, 1 tsp oil, 1/4 tsp salt, and pepper
  4. Toss shrimp until coated with lemon mixture; spread in a single layer, leaving space between each shrimp
  5. In a small bowl, combine bread crumbs, remaining tsp oil, remaining 1/4 tsp salt, garlic, and lemon zest
  6. Curl shrimp tails to heads to form a closed circle with each shrimp
  7. Spoon a heaping tsp crumb mixture in cemter of each
  8. Bake until bread crumbs are golden and shrimp are cooked through, about 8-10 min
  9. Sprinkle with parsley and serve
  10. Yields about 6 crumb-topped shrimp per serving
