Parmesan Topped Flounder

  • 3/4 cup Bread crumbs
  • 1/2 cup Parmesan cheese
  • 1/4 - 1/2 cup (only need as much to bind and reach a strong goopy consistency) Mayonnaise
  • 2 tbsp (to taste, can add more) Lemon
  • 1 tsp Dill weed
  • Pepper to taste
  • 4 pieces of flounder
  1. Mix in bread crumbs and parmesan cheese in bowl. Add mayonnaise until reaches consistency of chicken salad. Stir in lemon and pepper to taste.
  2. On a cooking sheet, coat evenly with cooking spray and place flounder pieces. Broil for 2 minutes on each side.
  3. Place mayonnaise mixture on top of flounder and broil until browned.
