Potato Onion Skillet

  • 4 small red potatoes
  • 2 small onions
  • 2 cloves garlic
  • cumin
  • garlic powder
  • salt/pepper
  • olive oil
  1. Cube potatoes.
  2. Chop up 2 cloves of garlic and slice 1 onion into long strips.
  3. Put potatoes and garlic in a bowl, drizzle with olive oil. Sprinkle salt, pepper, cumin, and garlic powder over mixture and toss to coat evenly.
  4. Saute onions in skillet with olive oil. Cook until translucent (about 3-5 min)
  5. Add in potato/garlic mixture, and stir evenly. Put top on skillet and let steam for 3-5 min. Stir mixture.
  6. Alternate between steaming and stirring mixture until potatoes are soft and onions are carmelized. (About 20 minutes on skillet overall)
