Raita Rice

  • 1/2 cup dry brown or white rice
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomatoes
  • 1/4 cup minced scallions
  • 1/4 cup nonfat plain yogurt
  • salt to taste

Cook rice according to package instructions, fold in all other ingredients just before serving. serve warm.
