Shrimp Scampi

  • 1 lb. shrimp
  • 3-4 cloves garlic
  • 4 green onions
  • 1/2 cup white wine
  • 1/2 cup butter
  • 2 tbsp lemon
  • 3/4 cup Parmesan cheese
  • pepper, to taste
  1. Cook the angel hair pasta as according to the package.
  2. Peel and devein shrimp
  3. Melt butter in skillet. When melted, add chopped garlic and cook until fragrant, about 30 seconds.
  4. Add shrimp and cook for about 3 minutes, until the shrimp turns pink, but not fully cooked.
  5. Add white wine and let shrimp simmer and finish cooking fully in butter/wine mixture.
  6. Stir in green onions, let the mixture warm while the green onion gets incorporated.
  7. In a big bowl, add the angel hair pasta and butter/wine/shrimp mixture. Toss until fully coated.
  8. Splash with lemon juice and coat with Parmesan cheese and pepper.
