It is best to toast the bread and maybe even use a little more bread than prescribed to keep the meatballs from falling apart.
- 1 egg, beaten
- 3/4 cup milk
- 4 slices day old bread
- 1 tsp salt
- 1/8 tsp pepper
- 1/2 tsp nutmeg
- 1 tsp minced onion
- 3 peeled medium onions, thinly sliced
- 1/2 lb ground beef
- 1/3 cup fat/salad oil
- 2 tbsp flour
- 1 tsp salt
- 1/8 tsp pepper
- 2 cups milk
Beat egg in large bowl. Add 3/4 cup milk and crumbled bread. Let stand 5 minutes. Beat with meat until bread is in fine pieces. add the rest of the ingredients and blend. Saute sliced onions in skillet till golden brown, stirring occasionally. remove onions to baking pan lined with paper towels. drop some of meat in rounded balls from teaspoon into skillet. brown well. remove and repeat till all meat is browned. stir flour, salt and pepper into fat left in skillet. add milk slowly and stir until thickened. Put meat balls in gravy, place onions on top. coer and simmer 30 minutes. serves 4.
