Thai Coconut Soup

  • 3 garlic cloves
  • 3 T grated ginger
  • 1/4 cup lemongrass
  • 1 t cumin
  • 1 t corriander
  • 1 Thai chile
  • 1 chicken breast
  • 1 onion
  • 1 cup shredded bok choy (more or less as desired)
  • 4 cups water
  • 1 can coconut milk
  • cilantro to taste
  • 2 T fish sauce
  1. Sauté 3 sliced garlic cloves, 3 tablespoons grated ginger, 1/4 cup chopped lemongrass, 1 teaspoon each cumin and coriander, and a Thai chile in oil.
  2. Add 1 sliced raw chicken breast and 1 sliced onion; cook 5 minutes.
  3. Add shredded bok choy, 4 cups water, 1 can coconut milk, cilantro and 2 tablespoons fish sauce
  4. Simmer 8 minutes.
