Winter Vegetable Curry

  • 1 Tbsp minced fresh ginger
  • 1 Tbsp minced fresh garlic
  • 1 jalapeno seeded and diced
  • 1/2 cinnamon stick
  • 2 whole cloves
  • 1 cup chopped onion
  • 1 Braeburn apple, peeled and grated (or some other tart storage apple)
  • 1/2 cup golden raisins
  • 2 Tbsp curry powder
  • 1 bay leaf
  • 1/4 tsp red pepper flakes

  • 2 cups chopped tomatoes
  • 1 cup vegetable or chicken broth
  • 3 cups sweet potatoes, peeled and cubed
  • 2 cups fresh spinach, chopped

Saute ginger, garlic, jalapeno, cinnamon, cloves in 2 Tbsp oil in a large pan over medium heat for about 1 minute till fragrant. Add onion, apple, raisins, curry, bay leaf, pepper flakes. Cook for 2-3 minutes till the onions soften

Stir in tomatoes and broth, simmer 4-5 minutes. Add sweet potatoes and cover, cook till potatoes are cover, 10-15 minutes. Stir occasionally.

Add in spinach, mix and allow spinach to wilt. Add salt to taste.
