Zucchini Bread

serves 20, 5 points per serving

  • 2 sprays butter flavor cooking spray
  • 2 cups whole wheat flour
  • 2/3 cup all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 Tbsp ground cinnamon
  • 3 egg whites
  • 1 large egg
  • 1 cup sugar
  • 2 tsp vanilla extract
  • 1/3 cup oil
  • 2/3 cup unsweetened apple sauce
  • 2 cups peeled grated drained zucchini
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped raisins

Preheat oven to 350. Coat two 8x4 loaf pans with cooking spray.

in a large bowl, sift together whole wheat flour, all purpose flour, salt, baking soda, baking powder, cinnamon and set aside.

Using an electric mixer, in a large mixing bowl bat egg whites until frothy. Add egg, sugar, vanilla extract, oil and applesauce, and beat until thoroughly combined. beat in zucchini.

Add sifted ingredients to egg mixture and mix well. fold in nuts and raisins. pour batter into prepared pans and bake in middle of oven till a toothpick comes out clean. 50-60 minutes. let cool. Slice each loaf into 10 pieces and serve.
